Pakistani Chicken in a Tomato and Eggplant Stew with Yogurt Cucumber Sauce

Once upon a cold and snowy winter night, I was visiting a friend in Baltimore.  The streets were sparsely lit as I trudged along, and I’ll admit I was a little scared – after all, it was Baltimore at night.  (No, this wasn’t the inner harbor…)  Why was I dragging myself outside?  The best reason of all – I was looking forward to pots and pots of Pakistani curry!

My friend promised me that a Mrs. Auntie Batool from Lahore would be cooking up a storm.  She did not disappoint.  As I peeked into the kitchen, I saw at least one pot on each range and other pots in the oven.  The smell of tumeric, paprika, and cumin filled the air.  I had myself a giant plate of basmati rice, various curries, meats and yogurt sauce.  It was wondrous, in a gluttonous sort of way.

Katsu Curry

While I’m on a Japanese kick, thought I should mention a common way to combine two previous dishes: Katsu Curry.  This is one of my favorite dishes, especially on a cold day, as it really fills you up and warms you from the inside out.  The katsu can be made with either pork (tonkatsu) or chicken (chicken katsu).  Personally, I prefer chicken, but I may be in the minority.

Japanese Curry with Chicken

I like giant pots of food.  Fragrant, hearty, slow cooked: they’re great on cold winter days as well as hot summer days with a cold drink.

This is a pretty straightforward recipe.  Brown the potatoes and other vegetables first for flavor, add some meats, add some curry powder, and you have a steaming pot of food.  Full disclosure:  I used the prepackaged stuff.  I know that it’s cheating, but unfortunately I had neither the the skill or time to make the curry powder from scratch.  Plus, the worst thing is to end up with a big pot of stuff you can’t eat.
