Grilled Italian/ Balsamic Asparagus and Portabello Mushroom

For my vegetarian friends, or those who just like to eat a bit more healthier, this is a quick and simple Italian Balsamic marinade that imparts great flavor to your vegetables.  This recipe makes for a great appetizer or side to a heavy day of grilling – it’s a nice change of pace if you’ve been making nothing but meat.

As you can see, I am quite partial to asparagus – after all, it’s finger-friendly!  Portabello can be a bit more complex, but can also make a great finger food when it’s sliced right.  Plus, I highly recommend portabello mushrooms in sandwiches.  You can take any leftovers here and put them into a sandwich for a delicious addition.

Asparagus with Ground Pork

If you are in a hurry or don’t feel like spending a lot of time cooking, I recommend this dish as an easy meal for two.  Asparagus with ground pork is relatively similar to lots of other Chinese dishes that involve ground pork and some stir-fried vegetable. Brown the meat, cook the vegetables on high heat, add together and voila – you have a meal!  I tried adding some shallots, which are not common in Chinese cooking, and was fairly pleased because the shallots gave the dish a little more aroma.  Also, I tried chicken stock instead of water, which was a big win.  The flavors are much better and I didn’t have to use as much salt.

The Sweet Scent of Asparagus

Asparagus

In a recent post I made Mushrooms, Asparagus and a squeeze of Lemon.  It’s a delicious dish, but not without its, um, side effects, as all asparagus dishes have – namely, a potent and potentially embarrassing aroma the next time you go to the bathroom.  Surprisingly, the smell is not a matter of mere digestion.  At this point, having never smelled the fabled asparagus scent before, some of you may be congratulating yourselves on your superior powers of digestion.  Before you get too smug, though, consider yourselves lucky – you don’t digest asparagus any differently from the rest of us.  You just can’t smell it.

Mushrooms & Asparagus with a squeeze of Lemon

Mushroom and Asparagus

As most of you know, butter is a must for sauteeing mushrooms.  A lesser-known fact is that butter is also a must for asparagus.  For example, aside from the occasional Chinese stir fry, you often see steamed asparagus with hollandaise sauce or some other butter-based sauce.  I then use a bit lemon juice to cut the buttery taste with a little bit of acid.  It melds together quite nicely.   Oh, and this only takes about 10 minutes to make. Enjoy!
