Ever notice that every grocery store seems to have rotisserie chickens placed center stage in its deli section? Well, I occasionally fall prey to this clever product placement. I’m pretty sure that not every grocery store can have its own rotisserie oven though – there must be some centralized rotisserie facility. Just imaging that place makes me drool.
Usually, when I look around after devouring a rotisserie chicken, it’s not a pretty sight. Let’s just leave some things unsaid. However, there are usually some leftovers and these leftovers work great in sandwiches or in tortillas. Here is one recommendation for a Panini, but of course the variations are infinite.
Serves 1
Prep Time: 5 min
Cook Time: 5 min
Ingredients:
- 4 oz chicken breast, precooked from rotisserie chicken
- 2 pieces lettuce
- 1 tomato, sliced
- mustard to taste
- 2 pepperoncini, sliced thinly
- 1 slice provolone
- red onion, sliced to taste
- 2 slices rosemary bread
Instructions:
- Assemble chicken, onions, provolone and pepperoncini onto bread
- Put in Panini press or on George foreman grill. If you don’t have fancy equipment, that’s okay too – press directly on non-stick pan. Cook until nicely toasted and the cheese melts.
- Open up the sandwich and add mustard, lettuce and tomatoes.
- Close sandwich and serve with kettle chips!

I love a supermarket rotisserie chicken as much as the next guy, but I can’t seem to make myself eat it straight. The breast meat’s always got this weird powdery texture… But like you said, it’s perfect to use in other things! Handy handy handy.
When you say peperoncini do you mean chili?
Pepperoncini are a type of chili pepper – they’re a little spicy, but not too much so.
This sandwich looks wonderful. I love using rotisserie chicken for other things too. Sandwiches, wraps, quesadillas, the possibilities are endless. Great time saver. Thanks for sharing.
I thought so…it is the generic name we use for chili peppers in Italy, but just to be sure…for example peperoni means bell peppers in Italian, and not salami ;-)
YUM!! This is filled with my daughter’s FAVORITE ingredients!! I’ll definitely be making it!! I LOVE rotisserie chickens… they are a base to many recipes in my kitchen!
Rotissere chickens do make for some good eating.
What a gorgeous sandwich, James. It looks and sounds delicious. You asked about my ingredients: I live in a college town so there are ethnic markets in the community. We live close to the ocean and are surrounded by truck farms and orchards and that helps too. I also use internet stores for some of my ingredients. I fall prey to those rotisserie chicken in the deli too….sometimes. I tried to roast my own last week and enjoyed it very much.
My mom bought me a panini maker for Christmas I love it. This is a must try. I like the heat in peperoncini.
